If you knew me a year ago, you would not have believed that I would ever choose to be a vegetarian. But here we are. My husband and I decided that we would do this together so January 1st, 2012, we gave up meat. Alex is actually a vegan so no dairy or egg for him. I just couldn’t fathom giving up cheese so I’m just a vegetarian.
For lots of people, being a vegetarian means eating potato chips instead of pigs in a blanket. Alex and I are trying to eat a varied diet, get our protein from different sources, and still watch our sugar and fat intake.
We recently joined a CSA (community supported agriculture) which means we’ll get $15 fresh, organic, sometimes local produce every two weeks. You can check out Urban Acres, if you’re interested in learning more about CSA’s. They’re cropping up everywhere (pun intended) so there’s probably one near you. Everything is seasonal, so we know it’s at its’ peak nutrition. I hope to post some of our recipes on the blog so that you can try some of our successes (and avoid the failures!)
